Back to School- Breakfast 3 ways



Is it just me or did this summer fly by. With "back to school" slowly creeping upon us I will be doing a fun series of back to school posts, everything from easy breakfast recipes, traditions and hacks to make our lives much easier. Below I will share some really easy 3 in 1 recipes. That's right 1 base 3 different ways, I mean who doesn't like an easy one pot/dish meals??? Am I right????

Breakfast cups

This one is probably my favourite and I've been testing them on my kids and especially my little guy loves it although he isn't going back to school, I'd still give this breakfast option to him as well since they both usually wake up at the same time and we do our morning rush routine before school alarm goes off.

Side note- You will need only 1 tube of Pilsbury jumbo biscuits for this recipe. First You'll grease a regular sized muffin pan with some non stick spray. Once you've sprayed the muffin pan, start placing the jumbo biscuit into each muffin cup.Preheat oven to 350 F/180 C.

1. Cheesy biscuit and Eggs

- 3 eggs

- 1/3 cup of milk

- 1/3 tsp of salt, garlic powder and pepper

- 1 cup of cooked bacon (you can sub with sausage)

- 1/2 cup of shredded cheese

Directions:

- Whisk the egg with milk, salt, garlic powder and pepper. Pour egg mixture into 5 of the muffin pans (you wanna only do 5 because remember we are doing a 3 in 1 recipe)

- Sprinkle the bacon on top of the 5 muffin cups

- Sprinkle the cheese on top of the 5 muffin cups

2. Maple Syrup biscuit

- 1/3 cup of maple syrup

- 1/2 cup of bananas (or any fruits you like)

Directions:

- Mix the bananas and maple syrup together place into 5 muffin cups

3. Nutella dream biscuit

- 1/2 cup of Nutella

- 2 tbsp of milk

- 1/2 cup of strawberries

Directions:

- Mix nutella and milk. Once combined add in strawberries. Place mixture into remaining muffin cups.

Place the muffin pan into the oven for 15 minutes. Let cool and enjoy.

P.S. These also freeze really well if you want to make large batches and just reheat when you need them.

Animal toast

Okay now this one is the easiest of them all. You literally toast bread and use different kinds of spreads, like jam, cream cheese, nutella, we use pea butter because my little girl has deathly allergies to nuts. Once you put the different spreads on top you decorate them with your child's favourite fruit. Now the trick with this one is that I let my kids pick the fruit they want and they are the artists to decorate their toast. This goes on really well and they usually eat it all up. These toasts freeze really well. So you can make a large batch and let them thaw out the night before so they are ready for breakfast, place some fruit bowls and let your kiddos decorate.

Frozen Yogurt Cups

This is another fast and easy recipe that also freezes quite well, for those crazy busy mornings. Now I found the best bet is to use silicone muffin cups or get yourself a large silicone muffin pan. You can use any flavours of yogurt you like, it could be plain vanilla, or mixed berry. The beauty of this particular recipe is it's really adjustable. Now I found that using Greek yogurt works the best and freezes really well and has a similar texture to ice cream once frozen, which will definitely be a plus for those picky eaters. Another winner about this recipe is that you can get your kiddos involved, have them pick which yogurt flavour they like and which toppings they want to use. There so many different variations of this you can make. We've even added chocolate chips,sprinkles and even crumbled cookies on top. The best part about this recipe, your kiddos helped making this recipe, they have a sense of ownership and will definitely eat it all.
