RECIPE: Sugar Cookies



I don't know who was more excited to try this new recipe me or the kids LOL. We have been testing out different recipes, some where too hard and dry, some where too soft. And now I think this is the winner. We also got these new awesome cookie cutters for the kids to test out.


INGREDIENTS

FOR THE COOKIE:

- 2 cups of all purpose flour

- 1/2 cup of brown sugar (this makes the cookie chewy)

- 1/2 tsp salt

- 1 tsp of baking soda (this makes the cookies spread, if you use baking powder it'll make the cookie puff up)

- 3/4 cups of butter (if you use salted butter no need to add the 1 tsp of salt)

- 1 tbsp vanilla extract

- 1 large egg


FOR THE ICING: (we are making the dye free version)

- 1/3 cup of milk

- 1 & 1/2 cup of icing sugar

- 1/3 cup of frozen blueberries, or any kind of berries

DIRECTIONS:

FOR THE COOKIES:

1. Mix the dry ingredients into a large bowl and set aside.

2. Mix butter and sugar together. Once incorporated. Pour in the vanilla extract and room temperature egg. Side note If you forgot to put the egg out. To get the egg to room temperature quickly. Get a bowl of super warm water and place egg in the bowl for several minutes.

3. Once all the wet ingredients are incorporated. Slowly start adding the dry ingredients in. Once all mixed together. Let the dough chill for about 10 minutes in the fridge. Meanwhile start making the icing.

4. Once the dough is chilled, take out the dough and pour it onto your rolling surface. Put some flour onto the surface first before you start rolling it out to prevent sticking. And start cutting out your shapes with a cookie cutter. And side note, if you find the dough sticking a lot just stick it back in the fridge to chill down a bit. Its just the butter starting to get warm and make the dough sticky.


FOR THE ICING:

- Using frozen berries are your best choice, you will get a lot more fruit juice than fresh berries. Just crush the berries with a fork and strain the juice out. Pour the fruit juice and milk into the icing sugar and keep mixing until its all incorporated. And there you have dye free icing.


Once the cookies have cooled down to room temperature you can start icing the cookies. If you start icing them when they are warm the icing won't stick and will just melt off.
